looks like a party of one produce extravaganza! fresh & yummy. what's your plan with the fresh mints?

TABOULI! (a double batch for a party . . . posted about it yesterday . . . !)

Do you find that fresh mint gets kind of funky after a day in leftover tabouli? I've had some bad experiences myself, so I usually leave out the mint until just before I serve it. The parsley holds up well though.

Regarding your comment, I am a vegetarian personal chef, but I would love to have more vegan clients. I am self-taught, so no formal training here.

I love your Cooking for One cookbook idea!! I'm sure many people will buy it.

Dang, Girl! Holy produce - good for you. Looks like you'll have some great meals coming up.

How do you like the Seventh Generation TP? I'm so used to my soft Cottonelle and haven't made the switch yet.

Hey Catherine--
I have to ask--did you shop at the Wedge? I only ask because I have never seen TVP in the bulk section before! Maybe I am really unobservant...I love TVP, though, and would be thrilled if I have just been missing it!

Thanks
Courtney

Catherine - one more thing - do you know what happened with KaiVegan's blog? Did it get overtaken by some internet vigilanties? Pool girl!

Holy comments, Batman! Awesome.

Melody, I've never had trouble with leftover tabouli, although all herbs do tend to brown a bit once cut, I've found. I wonder whether the amount of lemon juice I use helps? Thanks for answering my question!

Harmonia, my MwM is so early this week because I won't be home AT ALL tomorrow to post. (And I usually write up my post on the weekend after I go to the store, then save it as a draft to post on Wednesday.)

Crystal, I like the Seventh Generation TP -- I've never been a TP snob, but it doesn't bother me. When you read the package, it's kind of hard to NOT buy it:

"If every household in the US replaced just one 4-pack of 400 sheet virgin fiber bathroom tissue with 100% recycled ones, we could save: 1,450,000 trees, 3.7 million cubic feet of landfill space, equal to over 5,500 full garbage trucks, 523 million gallons of water, a year's supply for over 4,100 families of four, and avoid 89,000 pounds of pollution."

I encourage you to make the switch!

Also, I have no idea what's going on with Kai's blog -- I didn't get "pool girl" when I clicked on her blog. I have her email address and will send her a message! I bet something screwy is happening with Blogger.

Courtney, yep, I found the TVP in the bulk section at the Wedge, hiding amongst the beans in the top row (on the right-hand side of the main bag counter where the jars of smaller bulk items are displayed, just to the left of the membership desk.) I had to look for it for a long time. :)

Leslie, all you can say is, "nice list?" (kidding . . . !!!)

*Oops* I meant to say "poor girl", not "pool girl", but I guess my brain-hand coordination was dysfunctional yesterday ;)
